Tonight’s featured Tapa is: Light and Air"y" pork rinds served with a side of House Made Ranch Dip.

No picture but I made a cocoa keto mug cake with a generous portion of clotted cream on the top for dessert tonight. I think I will only make clotted cream in my small dish with a pint of cream from now on because it can go bad before we use it all since bready things are the usual thing you spread it on.

Although the buttery goodness is amazing by itself!

Of course!

Green Goddess Dressing

½ cup mayonnaise
1 cup Greek yogurt (I used creme fraise)
1 oz. (weighed) fresh basil leaves, finely chopped
2 tablespoons shallot, minced
¼ cup white wine vinegar (I used ACV)
1 teaspoon dijon mustard
pinch of kosher salt & coarse black pepper

I blended it in the Vitamix.

Tortilla based on Fathead Pizza dough.
Cooked the beef in the crock pot (with a touch of olives and onion) added a bit of cheese, and low-carb salsa

Estimates for macros:
Fat: 52g
Protein: 38g
Carbs: 5g

Pretty straigtforward.
Roast marrow bones (i think I did about 35 min at 350ish) untill cooked through. Let cool to point you can handle, but still pretty warm.
Scoop marrow into blender along with aprox same amount of good quality butter. (Pour in melted marrow fat out of pan also) add herbs if wanted (I added parsley & chives) zap till well blended and refrigerate till cold/firm… use as required (or scoop gobs of it directly into mouth whenever passing fridge… to test of course…)

I planned to fast today after a planned day off keto yesterday, but I’m freezing cold and hate that feeling so decided to eat.

Reheated some chicken thigh meat by frying it in ghee and made some mayo to coat it in.

Zucchini noodle Chicken Chow Mein and homemade sauerkraut

Leftover sousvide chicken thighs with zucchini noodles, sweet peppers ginger and green onions. Sauerkraut is Christmas Kraut, red cabbage, green apple and fennel, coriander and black peppercorns.

Underneath all the blue cheese is a ranch steak I treated myself to from M&S. Roasted up some mushrooms and asparagus. I actually couldn’t eat all the cheese! :laughing:

It felt like someone took a blow torch to my throat abd bow its graduated into my sinuses… basically i cant taste anything or breathe through my nose… makes eating pointless when you cant taste your food… :mask::mask::mask:

:slight_smile: @Alex_PN it’s a really lean meat. Tastes great :smiley: . If you don’t prep it it can sometime be gamey (best cleaned thoroughly). Deer fat though does tend to leave a waxy feel to your mouth so normally if I doing the back steps, especially as it is so lean, I will wrap it in bacon or cook it such that there is a lot of extra fat added. My kids love to slice it really thin, marinade it in soy sauce then literally slap it into a hot fry pan searing both sides and taking it off. If cooked too long it can go very tough otherwise. This one was very very tender and juicy as it had been in the BBQ for some 6 hours cooking a long slowly. I would spritz it with an olive oil and apple cider vinegar spray which had some herbs and spices and lemon zest thrown in.
