Made some Light and Fluffy Coconut Pancakes this morning. I prefer baking them (20 minutes @ 350° F) so I can use them for a quick dessert. Just pop one into the microwave for 15 seconds and then top with sugar free syrup or some berries. About 2 net carbs each.

The traditional meat for machaca in Mexican cooking is donkey skin as well. I was told this by a Mexican cook that I worked with but I can’t find an internet reference to back that up. It was boiled, shredded, dried and refried with the eggs and veggies. Usually it’s shredded beef nowadays though. It’s a great keto friendly dish with shredded beef, eggs, onions, peppers and some tomato chunks.
Roast chicken and celery leftover from dinner last night. Broccoli and cheese inspired from the soup posted a few days ago.

Finished off a good Monday with a giant mushroom cup stuffed with a burger, sprinkled with olives and parmesan cheese, with spinach and roasted asparagus!
Reuben casserole with mustard instead of thousand island dressing. Very easy to make and surprisingly satisfying.
We love hemp hearts in our yogurt. If you can find them on your side of the pond… buy some.

Blinged up a diet doctor keto roll with a baked cheese top. Stuffed it with chunks of freshly carved ham off the bone & a huge fried free range egg, slice of cheese and butter.

Been a little big since a posted. Saturday night was Prime Rib from Texas RoadHouse … first time I had it there and it was AMAZING!!
That led to fasting on Sunday … which led to this for breaking my 48hr fast …
InstaPot Brisket and cooked onions, a Kiolbassa brand sausage, salad (w/ egg, onion, bacon bits), olives, cheese (out of shot), pickles. I did not finish the brisket but did have a ChocoRite* PB Cup for dessert.
*We discovered thses from our KetoKrate from Jan.
Yeah, we’ve been adding in some Mozzarella Cheese to help with this. Does a pretty good job and adds even more flavor.
I was doing this as well, for most of last week and some of the week before. - Some days just took the lap photos, not feeling like getting up. Some others I did take time to snap an quick image before settling back in under the covers.
Lunchtime sampler plate - a little of everything. Sous vide eggs, chicken sausage, fried roast lamb, spam, egg roll in a bowl, cheese and bacon bread, egg bite, gherkin, olives. And you’ll love it all.

Here’s my Cronometer saved info, so you can see the coconut flour instead of the almond, and the fact that I use cheapo Woolies cheese
This was quite a lot better than the almond one, we thought (having made the base recipe at Christmas), and it was improved again by letting it cool down to room temp before removing it from the loaf tin.
We made 10 slices from it, which seems to be about optimum in terms of slice thickness for both mouthfeel and structural integrity (by which I mean you can get a lot of butter onto it), and is about 2g carbs.
