I’m still visiting my parents (teacher, we dont resume classes till Jan 7!) So I’ve been enjoying my Mom’s oh so well stocked and easy to work in kitchen.
Gnom gnom yeasted cinnamon rolls-


Keto lasagna-

And little hand pies! I made a mix of blueberry and “apple” (zucchini sauteed with butter, lemon juice, sweetener and spices) and served them with homemade vanilla ice cream.

Am I wrong or is everybody becoming much better cooks. I remember looking at the pictures say 10,000 posts ago and they were not nearly so gorgeous and delicious and keep looking.

But seriously… i have been struggling to figure out a good recipe for keto white chocolate…ive ruined sooo many batches! Mine end up kind of looking curdled.

I swapped the cacoa powder with powdered coconut milk. About 50g cacoa butter and 50g powdered coconut milk (~equal parts). Added the seeds of 1 Madagascar vanilla bean and about 8 muddled fresh mint leaves. With 1/4 tsp xanthan gum to help emolsify everything properly and confectioners Swerve to taste (2+ Tbsp).

Put it in the sous vide at 95 F for an hour. Massaged the ingredients together. Clipped the tip of the Ziploc bag and piped it into the silicone molds.

It’s super tasty!
