What did you Keto today? Part Deux!
Hard to tell what’s in here, but this is a Japanese A5 Wagyu ribeye salad for lunch/dinner. Includes sautéed garlic onion mushrooms, hardboiled eggs, goat cheese, pickled onions, and avocado. Dressed with an avocado oil-based mayo. Delicious! Dessert was truffled goat cheese.
Doing easy cooking. Just roasted chicken and frozen veggies. We are all still plague ridden here so simple food rules the day.
Yesterday I threw everything left from the fridge into arugula fried eggs with feta cheese, tomato and cilantro.
But today, after shopping and bacon prep I got to have this! Bacon dipped into tomato, chopped spinach, mayo and (of course) cilantro. Plus I refilled my dripping jar for week long cooking.
Keto coconut blondies. As you can see, a couple of pieces were sampled for health and safety purposes. Might whip up some coconut cream to serve with it next time I have some
Breakfast Italian Style
Well probably not traditional! Home mixed Italian Sausage (70/30 pork and beef) with Scrambled Eggs, Mozzarella and Parmesan Cheese, and a little homemade Marinara on top.
I’m very happy this Sunday morning because I’m going to see my special lady friend who just got back from Pulau today before she flies back to Florida.
They were awesome! As the recipe said, they’re only gently sweet which is perfect for me. Could definitely do with some whipped cream on top next time!

They call this the Cuban Benny…definitely a favorite, Cuban pulled pork on arugula topped with eggs and a mustard hollandaise sauce…could eat this everyday, must learn to make hollandaise like this little local diner does

Chicken stir fry (don’t call the keto police) there is 1/4 tsp honey in this one, tasty but bit too sweet, will go back to normal next time.
After a lamb burger patty topped with some yummy Double Gloucester cheese, I went looking for something to sop up the fat remnants on my plate. I dug a slice of Cheesy Skillet Bread (sort-of cornbread like and baked in a cast-iron skillet in the oven) out of the freezer. Yum…
