No problem, it’s super easy! Just get a bone-in pork shoulder and season it the night before you make it with minced garlic, Goya adobo, Goya sazon, and sofrito if you have it (Goya makes a frozen sofrito as well). To season it put deep slits all over it with a knife and put the adobo, sazon, garlic, and sofrito (if you have it) in each slit. Then season the entire outside with those same items.

Then you put it in one of those Reynolds turkey bags for the oven (after prepping the bag by rubbing your choice of oil inside of it to prevent the meat from sticking, and putting about a quarter cup of water inside). Then put it in the fridge.

The day you make it, you put a few small holes in the top of the oven bag and cook it for about 30-40 mins per pound at 300° F.

I asked the BF what he wanted for Easter supper and he said he wanted pot roast again :laughing:. I don’t mind. I really like it. I chose a different cut of meat this time to experiment. I have been using a bone in chuck roast but this time I got a boneless rump roast and it had a lot more meat.

Bleu Cheese Bacon Burger and Creamed Mizuna

The mizuna is a mild mustard green/lettuce from Japan that’s often included when you buy mesclun. I planted it in my garden this year and this is the first cuttings cooked like creamed spinach with EVO, fresh garlic, cream cheese and cream, nutmeg and S&P. Tasted very much like spinach, at least closer than cauliflower and potatoes! Fitting for today, I look forward to eating it through the fall at least.

That’s 2 strips of bacon chopped and added to the 1/2 lb. grass fed ground beef.
My diet has been lacking one of the primary food groups for a few weeks.

Dang - forgot to take a pic. I was winging it and it came out real good, too!

Harvested some asparagus from my neighbor’s garden and roasted it with some olive oil, garlic, salt, pepper and a bit of lemon juice

The main course was daikon doodles, sautéed in bacon grease with onion, pieces of ham and some chicken thigh meat I sous vide earlier.

Then I made a sauce from heavy cream, butter and Roquefort cheese. It was yummy. Poured it over the doodles and meat.

Wife brought me back some food from the get-together with our neighbors, since I wasn’t able to attend. Turkey, Ham and Seafood Salad. I also had some more Chicken/Broccoli soup and some after treats.

This is potica, a local dessert we eat during the holidays (easter, christmas, etc), there are also savory versions…regular potica is traditionally made with yeast dough with walnut, poppy seed or cottage cheese-tarragon fillings, now we have coconut, chocolate, hazelnut, etc. My favorite is “potratna,” meaning wasteful, and it’s composed of an outer yeast dough shell and layers of chocolate+vanilla cake dough, walnuts and cottage cheese.
These two are ketofied coconut(right) and wasteful (left) potica. The recipes are in Slovenian, but I can translate the links for you, if you’d like :slight_smile:

Yesterday was not completely keto as I had sweet potato fries with a bunless triple bacon burger in Smashburger, and fried pickles, for my birthday meal.

This morning, to start the day, pork sausages, eggs (all from my girls), and turmeric mayo.
