What did you Keto today? Part Deux!

Sous vide egg bites without all the carbage Starbucks puts in theirs. Bacon, cheese (half sharp cheddar, half goat cheese), eggs, cream and whole milk cottage cheese.

170 F for one hour. I’ll update with a new pic once they are finished and plated up.

They didn’t want to release from the jar so my husband ate his with a spoon right from the jar. Saves dirtying up an extra plate.

They were smooth and creamy and hubby said it was like eating pudding. Hopefully will reheat well in the microwave as the other 4 are going in the fridge.

Backpack butter for my trip to Europe on Sunday. Coffee machines everywhere in Belgium so I don’t need to take my instant keto coffee like I do when I go to China.

But can’t always get cream and no butter at the office so I pack my own. If I can have a bit of sweetener and butter I don’t need the cream.

This is my setup: cheese slicer, foil candy wraps and a block of Kerrygold.

@Ruina it was this one I had and it just tasted like spicy tomatoes.

Huh. I still say weird looking kimchi. You should be able to visually identify all the vegetables. And it should be sour as well as spicy. And ever so slightly fishy.

Edit: I just double checked with my Korean roommate. I covered the label and asked if she knew what it was. She said “sauce”. (Actually she said “sauce-u”) When I revealed it was kimchi she said she’d never seen it look that way. It is chopped too fine and she’s never seen kimchi that color.

So you still may not like kimchi, but I’d say it’s worth another test if you see something with recognizable chunks of Napa cabbage that are still very white and green. Not brown.

Edit again: She said it can’t be just any cabbage. It has to be the long kind. (What I know as Napa cabbage.) That said, using another kind wouldn’t make it bad, just not authentic. She likes my homemade sauerkraut (German Kimchi as we call it at my house. Or German Paocai, depending on who I’m talking to.) it’s just a different thing.

You butter system is great! If you get stuck without coffee in China, try 7-11. Many of them where I am have the machines that grind the beans on demand. But instant isn’t a bad idea just in case.

You don’t need the egg white. Here’s the two recipes that I use.

Both require 2c. pecan halves and are roasted in a preheated oven at 350F on a sheet pan lined with parchment paper. Bake 5mins, stir and bake for another 5mins. Remove and see how many are left by the time they cool completely! *Make 2 batches doing the plain, salted ones first and use the same parchment paper for the spicy ones on the second batch.

Regular Roasted: 1Tbs. fine salt and 2Tbs. butter, melted. Toss in a bowl and spread on your pan. Bake as above.

Spicy Roasted:
• 2 tablespoons butter, melted
• 1 tablespoon Worcestershire sauce
• 1/4 teaspoon ground red pepper
• 1/4 teaspoon salt
• 1/4 teaspoon garlic powder
• 8 shakes of Tabasco (optional)
• 1 tablespoon chili powder
Toss in a bowl and spread on your pan. Bake as above.

Needed some salmon and roasted veggies to fix this crappy day. Smothered in my fave cheese sauce…there was an extra piece of salmon that I inhaled too :joy:

Just prepped for tomorrow.

20% ground beef cooked in ghee. Fresh broccoli oven cooked in olive oil and sea salt, mixed together.

#3015

3 local duck eggs cooked in butter with salsa and topped with shredded cheddar cheese.

Coconut cream blended with cocoa powder and a dash of erythritol and vanilla. Topped with pecan bits toasted in butter and cinnamon.

Waiting on the next batch of broth to finish up so I can make a simple zucchini and mushroom soup. I’m out of keto foods so I need to hit the grocery store for some meat and veggies!

Mmmm.

Nice plate, too.

Pork belly roasted on a bed of Brussels sprouts…I could only eat half of what I put on plate!

(Karen) #3018

Pork belly looks fantastic! I’m not sure where could buy some in town. I’ve checked two of the stores.

Finished my surgery and I am back home. I had a brachial block, so my arm is hanging there like dead weight in the sling. The surgeon was pleased, so let’s hope for no nerve damage and quick recovery.

Haven’t eaten since this morning, but not really hungry… Yay keto

Fatty creamy spinach sauce over ground beef stuffed cabbage.
I made the sauce with EVO, butter, garlic, spinach, heavy cream, mascarpone cheese, sour cream and a sprinkle of manchego cheese - season to taste
