What did you Easter?

I know not all celebrate Easter, but if you do, I was curious how you did with food on Sunday. It is a big brunch and family gathering sort of day. And then there is the candy.

We didn’t go to a brunch, but we did go to a family gathering. My in-laws made ham, corn, glazed carrots, potatoes, and rolls. My SIL brought mac & cheese and a veggie tray. I had to bring dessert (always have) and then I told them I would also bring deviled eggs. I figured if all else failed, I had those eggs and maybe some of the ham.

In the end, I think I did pretty good. It was my only meal of the day. I had ham, deviled eggs, and pretty much all of the broccoli and cauliflower on the veggie tray. (No one else was eating it, except my kids who polished off the carrots).

Keto win?

I love deviled eggs, sounds like you had a nice keto day!

My teens were with their Dad, so I made a big breakfast w/eggs, sausage and broccoli and then I worked all day on my garden, getting it ready for planting. I DID eat two jelly beans mid day. Dinner was a big salad.

I felt like my day was perfect.

My wife bought a spiral-cut Ham, (sans the candied glaze) cauliflower-rice “cheesy grits” and Brussels sprouts. No sweets, no one expected sweets, though not all in my family are low-carb. Oh, my, it was delicious.

I ate ham and deviled eggs. Baked beans and potato salad were the only other options and I skipped on them. I did have a bite and half of cake made with real sugar. It was the first time I’ve knowingly had real sugar in six months and I was curious how I would react. Oddly enough, the real sugar had a funny aftertaste and I didn’t really care for it. I was half expecting to wake up this morning with cravings and a monsterous hunger but no such things occured. In fact, I’ve had roast beef in the oven for the past 4 hours and all i can think about is tearing into it when it’s done… should be another hour.

I knew my keto options would be limited at my in-laws, so I made myself a spring mix/spinach salad, with 3 hardboiled eggs, 4 chopped up slices of bacon, 1 avocado, olive oil/apple cider vinegar dressing, and some sliced Parmesan cheese a few hours before leaving the house. At my in-laws, all I had was some delicious ham, some turkey, and 1 small tablespoon of stuffing (I just HAD to have some). Everything else was pretty sugar/carb heavy. Luckily I had some homemade keto-friendly lemon cheesecake when I got home, so I was able to satisfy my sweet tooth with that.

I made some slow cooked beef short ribs, green beans sautéed in bacon fat, and caramelized butternut squash. The squash was the splurge, but sooooo worth it.

Roast beef and lamb, veg and keto Yorkshire pudding!!

Frequent turning down offers of Easter eggs.

Wife, oldest daughter (26yo) and self.

Protein heavy:

Appetizer of fresh scallops cooked in just a drop of avocado oil.

Some mushrooms in butter on top of Rib Eye Steak medium rare with home smoked blue cheese on top of that.

Seltzer water. Sadly I’m giving up wine because Alcohol just does not agree with me anymore. The more weight I lose the more it dehydrates me and affects my sleep. My wife and daughter rarely drink anything.

Left over steak defaults to my wife since I’m fasting for a few days. She was very happy.

I skipped breakfast, then went for the Easter brunch in my retirement community, I had:

  • Bacon and sausage
  • Lox + capers + cream cheese
  • Shrimp
  • Carved leg of lamb
  • Baked ham
  • A few bites of au gratin potatoes :frowning:

I took a few sausages links and slices of ham home for later. I also took home a giant chocolate muffin. :frowning:

My blood sugar before bed was 96, so no damage there.

That sounds delicious. I just ended an extended fast on Saturday, starting another one in a few days. Now I’m thinking of making myself some mushroom and buttered covered rib-eyes thanks to your post LOL

That sounds delicious. I have been using no dressing or some olive oil on salads lately. I thought I would miss dressing, but I really don’t.

I might have had to as well, if it was good stuffing. That might be my favorite part of Thanksgiving.

I ALMOST made a keto cheesecake as the dessert, but I opted for something I knew would please the in-laws and be much less tempting to me: peanut butter pie. Oh and also my first attempt at keto cheesecake in January was a lumpy fail.

I should have known better – always let the cream cheese come to room temp – but I was rushing and thought it would be ok. It was not.

I tried the no-dressing thing 1 time, but I just couldn’t do it. I need my salads to have something on them. Plus, I’m able to get in the extra fat macros with olive oil so I usually do 4 tbsp olive oil, 1.5 tbsp ACV, and maybe the juice from a quarter of a lemon.

and yes, the stuffing was so good. I might just have to have more than a spoonful during Thanksgiving.

Ahh, the peanut butter would have too tempting for me! That’s my weakness. My cheesecake is pretty simple, especially since I don’t make a crust. It’s pretty much cheesecake in a cup. I add a thin layer of peanut butter with some crushed chocolate at the bottom of the cup and leave in the freezer for a while, then pipe the cheesecake on top.

My first Easter on keto! I made a pork loin so I wouldn’t gorge on ham. Also made a green beans and ranch dip appetizer and a keto cheesecake for dessert, which came out great.

I had no booze or a single piece of Easter candy from my kids’ stashes! I felt good afterwards and had the energy to clean up while my husband suffered stomach issues and a serious headache and crashed on the couch at 7pm. :woman_shrugging:

I opted for OMAD and had a small filet mignon, deviled eggs, brussels sprouts (my FAVORITE), and one dry rubbed smoked rib. There were so many carby options for dinner, not to mention all the candy for the kids.

Friends wanted to go to a sandwich shop for Easter lunch. I had resigned myself to a small pile of fillings, but the shop offered to turn the sandwich into a salad. And it was huge and beautiful and delicious!

My Easter was a disaster. Wednesday was full of sushi and potatoes and carrots. Thursday had bread and more potatoes and some mutton. Friday was the worst, until I got butter with the fish, and I think I ate almost as much butter as fish… Saturday was better, because I could buy some cheese and salami, and I even got taco. Yesterday was awful, had brioche and a banana for breakfast, and just a protein bar for dinner. And today there was more bread, but also hamburger. And decided to have a little bit of ice cream for dessert, as I’d already gotten somewhat used to carbs. Not even sure I want to eat tomorrow, but that’s only because I got enough protein today.

I’m so glad to be at home again. I got hungry for real food (protein and butter) when I only got carb loaded (supposedly healthy) food.

Tbh, Easter was no holds barred for me. I allowed it and had a good time with my solid chocolate bunny. :metal:
