Walker Farm Flat Iron Steak: Sous-vide

Had the opportunity to visit Walker Farm at Whortleberry Hill in New Braintree, MA yesterday. The farm was featured in episode 131 of the 2ketodudes podcast (link: http://2ketodudes.com/show.aspx?episode=131). Joanie was very gracious and generous with her time. She spent over an hour with me on a personal tour of the farm to show how well she cares for the herd. We got right in the middle of more than 60 - 2 tonnes Devons, who were friendly to the point of hemming us in among trees and rock wall that lined the current feeding pasture. It’s evident that her animals are very healthy and lively.

Among other cuts, I purchased flat iron steaks which I cooked soud-vide-on-the-cheap using Alex French Guy Cooking technique (link below). Here is a synopsis:

  1. Submerge meat in water bath set to desired cooking temperature: Medium rare 57C/135F
    for example:

  1. After 1-2 hours remove meat and TORCH IT!

  1. Eat your meat - I enjoyed mine by thinly slicing it and pairing it with a nice 2014 Gigondas… MMMM. Thanks Joanie!
