Velvety Keto Risotto

Missing risotto? Not any more! Dry fry konjac rice until almost dry. Add a few quartered cherry tomatoes and toss a few minutes. Spoon into bowl. Add about 1/2 cup HWC and two thin sliced mushrooms to hot pan and singer hard until sauce reduces by half and mushrooms go soft. Add some smoked paprika and about 1/4 cup shredded parmesan . Turn off heat and stir vigorously till sauce emulsifies. Fold in rice and then stir in a knob of butter. Top with smoked paprika and black pepper.

What Konjac Rice brand are you using? The one I just looked at on Amazon has 18g of net carbs per serving.

That’s kinda high carb count if we’re aiming for “incidental carbs” < 20g per day.

Yeah, despite the name and the “low carb” claim, that product is mostly tapioca starch.
