Two issues, "crunch" and am "I eating too much?"

(jim Chiodo) #1

hopefully, the constipation issue is “behind me”.

Next issue, I am craving “crunch”. Toasted Enlgish muffin, crispy rye toast, chewy bagel or crusty Italian bread. (any of these with gobs of butter or cream cheese). The closest Keto thing I can find in bread like foods is “fluff” or a pancake like consistency. Is there any way to find crunch on keto? I’d also love to dip a nacho chip into a bowl of melted chili cheese & salsa because it’s not polite to stick my finger in the bowl, lick and then double dip.

Although i’ve lost 40 lbs in 4 months I’ve slowed down and wonder if I am eating too much? I saw a recipe for “1 carb bacon and egg crepe pockets” that look good. The recipe had 4 slices of bacon, 4 eggs, and seasoning plus a crepe. 2 eggs, 3 oz neufchael cheese and seasoning makes 6 crepes.

Here’s the problem: A “serving” is one of these crepes with the above egg and bacon. Compare to a normal breakfast, it’s not unusual to consume 3 or 4 eggs and 3-4 slices of bacon or sausage patties. Sometimes I scramble with cheese spinach, mushroom (and meat) Lunch and dinner portions of other low carb fare similar size. In pre Keto days, in addition to the above would also include a bunch of bread, potatoes snacks and sweets. Yes, I like to eat.

Even during the 40 lbs loss in 4 months, my eating habits haven’t varied much.

Am I eating too much and can I continue to loose as long as the "mass quantities of food are keto? An no, I don’t exercise. I’m retired and most of my activity consists of sitting at a computer, driving or attending meetings. My age is 72.

Go get yourself some Pork Rinds for your crunch! They are awesome with salsa too. And I’d say if you are continuing to lose weight why are you worried that you are eating too much? Do you not think it is working?

These seed crackers look crunchy to me, just not in that tortilla way.

I like big meals honestly. I get less anxious that I’m going to end up being hungry later that day. 4 eggs and some bacon hits the spot and I’m usually good until around the same time tomorrow. Not only does is satisfy the eat to satiety tenet, but it also gives the metabolism the needed break from dealing with insulin and keeping lipolysis running.

I get my crunch from cheese crisps. Either home-made or store bought. You can find them in most stores as salad topping alternatives to croutons. There are also a couple of snack brands like Cello which are deliious. Trader Joe’s even had them for a bit.Not sure if they still do.

They are super easy to make, but it might take a few times to perfect the crunch you want. Recipe below. My trick: wait to take them out of the oven until I think they might be burnt (turned a bit brown). The smaller you make then, the crunchier they seem to turn out too. Hope they help!

As far as possibly eating too much, calories are still important. If you are eating too much your body doesn’t have to tap into it’s own fat stores and you won’t lose weight. I find that if I only eat when I’m hungry, I usually only need one or two meals a day and I lose weight. As your body fat goes down, your body will tell you it’s hungry more often though too.

The longer you are in ketosis, the more efficient your body is at producing and using ketones as well. In the beggining you are literally urinating our calories, but this eventually stops (this is why keto urine sticks are not a great indicator of ketosis after a while).

As Dr. Fung says, if you hit a plateau and stop losing weight, try something different. Intermittent fasting has worked great for me and many. I would say dialing back your food or only eating when you are actually hungry is the best bet. I no longer subscribe to the 3 meals at set times a day model. It makes me eat when I’m not hungry.

That’s the exact feelings I had, sir. I was missing my crunchy snack something fierce. I went to the pork rind. Got to watch out on those, some brands are higher in protein than others. Its very easy for me to eat an entire bag of those crunchy friends. Especially dipping them in my chili, or guacamole :cowboy_hat_face:

As for being afraid you are eating too much, just be sure to keep the carbs low, and try not to go over your protein limit [i.e. mine is 70 grams +/- 5 grams. Protein can be broken down into sugar, and that sugar can give you a insulin response, and that response can keep you from burning fat]. Remember, the amount of calories WILL NOT MATER. I was doing the math earlier today. On the days that I do eat, I’m eating between 3,000 and 4,000 calories a day. I’m currently enjoying a large cup of hot cocoa that I made using heavy whipping cream (about 16 oz) a generous tbsp of coconut oil, and a generous teaspoon of ghee (clarified butter). Altogether the total calories for this comfort food beverage is in the neighborhood of…
1200 calories. Just for one cup. Its almost 100% fat. The only carb is from the cocoa powder, that has about 1 gram per tbsp. I used 1 tbsp. This should put me in the neighborhood of 5,000 calories today. From experience now I know I won’t gain any weight, but in fact might just lose some.

If you feel hungry, try the salt trick. As soon as you begin to think you might be feeling hungry, put a pinch of salt on your tongue. Let it dissolve. [someone here correct me if i’m wrong, but that will get it into your body faster than swallowing it. Osmosis should take it through the mucus membranes in your mouth directly into your blood stream. Near instantly.] you should feel much better pretty quickly as hunger pains while in Keto are usually just the feeling of an electrolyte issue.

Alas, but as for bread, I do miss having sandwiches. Someone out there needs to make a carb free loaf of bread. I would force it to fit into my weekly budget.

You’ll continue to lose until you don’t. Eating less will make you lose more, but you’re far from having to worry about that. 40lbs in 4 months is a really good pace and you shouldn’t think about changing your habits until a clear problem shows up. It’s better to eat too much than too little, especially at your age, though don’t use that as an excuse to overeat on purpose either.

Thanks Berengal, that reminds me, dont stuff yourself either. Eating too much anything can send a signal from your stomach to get the pancreas a kick start and begin outputting insulin ahead of time. That insulin will keep you from burning any fat, and force your body to store the fat you just ate.

Pork rinds!!!

I make fathead crackers using the fathead pizza recipe from ditchthecarbs.com and and adding extra salt, parmesan and a heap of seeds.

Roll it thin, cut it with a pizza cutter and bake at a lower temperature than you would for pizza so that it goes crispy without burning.

Sorry about the crap picture: it’s the only one I’ve got

Thanks for that. I was just thinking about doing something similar myself since I’ve noticed sometimes when I make keto bagels, if I have too much cheese and then bake them for too long the edges sort of run out a bit and become deliciously crispy. More salt, parmesan and seeds sounds like just the thing to make proper crackers.

whisps is another brand, found in Costco. Add’s a nice crunch!
