All easy to avoid by first placing the turkey in the empty pot and then filling it with water. Then, remove turkey and measure the amount of water. Use that amount of oil when frying. Plus lowering the turkey very slowly. No frozen birds, it needs to be completely thawed.

We’ve been deep frying our turkey for several years now. Last year we tried deep frying it in lard. We did not like it as much as deep frying it in peanut oil. This year we are going back to peanut oil.

Yeah, I know😔, but the turkey came out really oily with the lard. The skin is much crisper with the peanut oil.
