The BIGGEST problem with Keto: CRUNCHINESS

I’ve tried several recipes now and can’t a get a good crunch going from my food :frowning:

Any suggestions?

Hi I fry shredded Parmesan cheese in a pan with kerrygold butter and pink Himalayan salt. Yum. I eat as crackers or crumble onto my meat… well done to burnt bacon does trick too. Very Roasted Brussels sprout leaves too.

Hello James- I also agree that I miss the crunchiness too! I was never a lover of pork rinds…still not a big fan…what has helped is something to dip them in. Maybe guacamole or some bacon ranch dip? I go through phases where they just gross me out. Of course the typical salad does help with some texture to our Keto food. I do the cheese crisps sometimes, they are super expensive at the store so I don’t buy them too often. I know they are very easy to make…but I am by far not a fan of cooking! Hopefully you will just get used to this WOE and won’t think about it too much.

Cheese crisps are easy to make in the microwave

I can turn a 12-slice package of cheese into cheese crisps in less than 10 minutes (4 batches; 3 slices per batch; 2 minutes per batch). You can use silicon cupcake molds, but I find the 3-well and 6-well silicon trays so much easier to load and unload. I’ve created crisps with sliced cheeses, sliced off from blocks, and shredded. They all work.

But you really need the silicon molds to keep their shape and texture consistent. I used to make them on parchment paper or a silicon mat, and they tend to spread all over when the cheese gets molten.


Pepperoni crisps are also easy in the microwave. A plateful of pepperoni takes about 40 seconds. Just put paper towels below and above.

Low carb tortillas or Joseph’s Lavash Bread can be crisped up in an oven, similar to nacho chips.

Whisps is a brand that makes the Parmesan cheese chips. When I found them I knew I found my crunch. They are great on salads etc.

Also I usually like my bacon cooked medium but sometimes I will cook until super crispy for the crunch.

Raw vegetables with homemade blue cheese dressing can also be a great crunch.

We eat something that we like to call Flackers. Grind up 2 Tbsp golden fax seed, add 2 Tbsp water and a sprinkle of your favorite seasoning, garlic salt etc mix well. Spread onto a silicone mat or parchment and microwave until crunchy about 1 1/2 minutes. I put the silicon mat on a dinner plate to help get it in and out of the micro. Nice crunch to sop up my eggs, cheese & flackers, almond butter etc…
