We like our Thanksgiving leftovers in the Blair house, and always try to get creative by making new meals out of our scraps. I was wondering if any of you foodies got creative with Thanksgiving leftovers.

I made a soup out of our turkey and leftover relish plate tonight. I used leftover turkey drippings and made a stock. I didn’t really measure anything, but I threw in lots of turkey, and moderate amounts of broccoli, cauliflower, mushrooms, carrots, and celery, I cooked it on medium heat for 30 minutes. I added a decent amount of heavy cream, put in on simmer for 15 more minutes, and salted to taste. The seasoning from the turkey and mix of vegetables was enough to flavor it. If I could go back, I would add a thickening agent like xanthan gum. I’d post pictures, but I didn’t consider it in time, and there’s no leftovers!

*We had family over who didn’t like the idea of not having carbs, and egg noodles paired very well for them.

I made almost the same soup, but used the leftover Cauli-mash (with cream cheese/butter/garlic/parm) to thicken the soup and added two packages of frozen broccoli to make it colorful.
