I have stayed away from all sweeteners and desserts. I am beginning to have a sweet tooth craving. Does anyone have any super easy (as in not the best baker) also not many ingredients needed and low carb as possible? I’m not really into most kinds of nuts, I do like all natural peanut butter, but I’m trying to avoid that because I will binge on it! Although I am fine with that in a recipe, I just stay away from the jar as I like it just with a spoon!
Sweet tooth
One of my easiest:
Big bowl of “custard” (based on cream cheese pancakes)
Ingredients:
- 3 Eggs
- 3 ounces cream cheese
- 1 tsp cinnamon
- 1 tsp vanilla extract
- EZ-Sweetz as needed
Directions:
- Blend all ingredients together (I use a Magic Bullet)
- Pour into a microwave bowl
- Microwave for 60 seconds, stir, 60 seconds, stir, 30 seconds, stir, and repeat until mixture is set.
- Top with low carb whipped topping, fruit, or syrup (as if they were pancakes).
Another easy one is a Quickie No-bake Cheesecake type dessert I throw together without measuring anything:
- Several spoonfuls of Mascarpone (or Ricotta) cheese
- Several spoonfuls of extra creamy whipped cream
- EZ-Sweetz, almond extract, vanilla extract, and/or cinnamon to taste
- Just mix it all up.
Note that some Ricotta cheeses can be a bit “grainy”, so it may not be as creamy as expected. And, beware, some Ricotta cheeses can have a lot of carbs. Mascarpone is best – just so smooth and tasty, but it’s more expensive.
Variations:
- Fold in, or serve with, some fresh or frozen low carb fruit (e.g. sliced strawberries, raspberries, etc.).
- I’ve tried it as a chocolate dessert by adding a tablespoon or two of unsweetened cocoa powder instead of the cinnamon. Yum.
I just made coconut whipped cream with canned coconut cream, a little confectioners style stevia and some vanilla extract.
Whip it all up and enjoy as a dip (or by the spoonfull). Yummmm…
I made a keto mug cake with a dollop of peanut butter in the middle served with whipped cream, so delicious, I think it had 4 total carbs?
These are all awesome! I appreciate it! Going to try a few of these out overtime and see which ones really fit the sweet tooth craving for me! I appreciate it!!
Wow that looks super easy as well lol, I have been wanting ice cream! It’s been 75-85 the last three days here!
I just have whipped cream, add in some chopped strawberries, no sweetener, lovely.
I tried this recipe for pecan cookies someone posted recently, didn’t have the sweetener in the recipe so just added 1tsp Truvia instead: https://stepawayfromthecarbs.com/easy-low-carb-pecan-cookies/
They’re really quick & easy to make, low carb (if you can resist eating 1 or 2, I couldn’t!!)
You got lots of good suggestions here. Mainly because they all have loads of fat. EAT MINDFULLY - and if you find your cravings get stronger after eating something in these posts, I recommend (as a recovering sugar addict) that you cut ALL sweets until you’ve been at least 6 months keto, and then be very tentative about reintroducing them. Many of us are so sugar addicted that artificial sweeteners will set off very troublesome cravings. You’ll have to do your own n=1 to figure out if the stuff sets you off or not. IMNSHO, if you get cravings from things containing artificial sweeteners, they are not worth putting in your mouth. Freedom from the addiction is FAR more satisfying than putting another bite in your mouth.
I’ve made that recipe several times. I usually add about a 1/4 cup Lily’s chocolate chips and 1/4 cup unsweetened coconut. I’ve also used macadamia nuts. Last time I made them I used the Lakanto Golden (i.e. “brown sugar”) sweetener. I’ll definitely do that again. :)
Almonds really do have a lot of carbs compared to some of the other nuts that are available. I’m surprised they (and almond flour) are as prevalent as they are.
I completely agree, the good thing is I am actually not really a sugar addict, before keto I never drank pop, I hardly ever had sweets, I would maybe once a month have a craving for something sweet! I honestly was just someone who would overeat carbs, never really went for the sweet stuff, I was a huge bread person, but thankfully I have had 0 bread cravings.
Lucky you! I overdid ALL of it. But I have no problems with the “substitute real food on keto.
Honestly if I did binge it would be from bread, but it hasnt bothered me watching people eat it! If I was at a bakery with all the smells that would be different lol, torture!!!
