Sweet and Spicy Toasted Pecans

inspired by/in honor of @Bahrutile :blush:

2C pecan halves
2T melted coconut oil
1/4t cayenne
1/4t cumin
1/4t salt
1/2t truvia (or to taste)

mix pecans, coconut oil, and dry ingredients in bowl…dump onto lined cookie sheet
bake at 350F for 5 min
(i was done prepping before the oven was ready so i threw them in and started the timer after the oven was to temp…i may increase the time for more crunch next time)

some will be eaten as is…some will become pecan butter :blush:

2c pecans

first batch never made it to butter…this one may not either…
first batch seemed on the oily side…so adjust we must :blush:
increased spices, decreased oil
cooktime 12 min ISH at 350 (just watch them after the 8-10 min mark that they don’t burn)
at around 8 i swished them around and made sure they were doing ok

these are definitely spicier. so…if that’s not your thing go somewhere in the middle or stay with the original measurements. i do recommend reducing the oil…much better

Those look awesome! I’m going to do the no sweetener May so I’ll need to make a new batch of pecan butter with no sweetener.

probably…
it will be a LOT messier since coconut butter doesn’t get as thin when melted…
prob be more like one of those ā€œcandyā€ coated nuts

i wouldn’t add any sweetener since coconut butter is pretty sweet on its own

let me know how it turns out if you try it

ps these suckers are soo good but a little addicting…(ok a lot/very) for me lol

edit: you might need to pop them right in the fridge/freezer right out of the oven to make sure the ā€œcoatingā€ sticks

Okay, so here’s what I did since I am a) not a good cook, b) have given up my true love – PB, and c) trying to figure out how to use that coconut butter.

I wanted something slightly sweeter and less spicy:

  • coconut butter & coconut oil melted together
  • salt
  • 1/2 teaspoon swerve
    mixed it all together and toasted almonds for ~10 min (some were more ā€˜toasty’ than others :frowning2:)

So, I took it them out of the oven and let them cool for a bit. Melted 1.5 squares of 90% choc with coconut oil and poured it all over, stirred it up and put it in the fridge in little clusters.

Now, it’s not the BEST thing in the world, and it’s no PB, but it’s a nice little snack if I’m missing my PB!!

i bet they’re fantastic.
you could also make them into butter with a ninja/vitamix/blendtec and then it might feel more like PB?
i actually no longer like PB since going keto…i thought i loved it…we can still be friends right? :blush:
i do like almond butter a LOT…

i am trying to remember what was in the coconut butter chocolate ā€œpudding/fudgeā€ i used to make.
I think i just did coconut butter, cocoa, and sweetener…pudding at room temp, fudge colder.

the very first recipe i ever bookmarked keto was for Coconut Butter Cake…still haven’t made it for fear that it will be amazing and i will want to eat it for all meals until it is gone…in one sitting probably LOL

google ā€œketo coconut butterā€ it will give you all kinds of ideas :slight_smile:
