Super Simply Fudge

Tonight I finally got my hands on some cocoa butter at Earthfare. So I had some fun and made this yummy fudge! There is lots of ideas in my head about what to add to it… and I am sure you can have fun with it too!

4oz cocoa butter
4oz coconut butter
1/2 almond butter
Pinch of pint salt
Stevia to taste (I’m bad at measuring…)
1/8 tsp Xantham Gum
1/2 tsp vanilla extract

I also added collagen and Ashwagandha as I have been using a lot of adaptogens lately.

Warm up all ingredients on low in a sauce pot, mixing frequently. Once melted, whisk in xantham gum and vanilla. Place the mixture in a pan and stick in the freezer. Voila! I will upload pictures the next time I make it… my family already devoured it!

I make something similar

100 grams cocoa butter wafers
140 grams nutiva coconut manna (coconut butter)
140 grams coconut oil
100 grams natural nut butter
1/3 to 1/2 cup cocoa powder

Chopped nuts (optional). Can also add some swerve if you don’t find it sweet enough. I melt all the fats/butters together, then mix in the cocoa powder. Line a cookie sheet with parchment paper including up th sides, then pour mixture across the surface. It will be about 1/4 thick, depending on the size of your cookie sheet. Scatter with nuts of your choosing if desired, then refrigerate for 4 hours. Score the surface into bite sized squares, then lift the slab up and snap into pieces. Store in the fridge.
