This is a new favorite sweet treat for me (as opposed to 90% Dark Chocolate) that I and my kids love. Best part is, it’s extremely easy and quick to make.
Ingredients:
Heavy Whipping Cream
Peanut Butter
That’s it. Technically, there are a lot of ingredients in the peanut butter (depending on the brand and type), but whatever, that’s done for you, and it’s enough.
As for what to do?

scoop out a decent spoonful of peanut butter into a bowl (the amount will depend on how much you want to make and your rationing against the carbs/sugars in whatever peanut butter you use):

Pour some Heavy Whipping Cream on and around (could do in other order too, doesn’t matter).

Start stirring around. Make sure to get the Peanut Butter off the spoon in some way, as it will have trouble properly coming off just sitting in the cream.
It will start to look spotty like a creamy soup at first, but just keep mixing at a moderate pace with the spoon (no need for anything else), for about a minute usually, depending on the ratio of peanut butter to cream.
TIP: The more peanut butter in the cream, the faster it will thicken. Conversely, the more cream in, the slower. This can also factor into how you want to balance the end thickness.
- Soon it will start to gain stiff peaks and a smooth color and consistency. At which point, stop when it’s as thick as you desire. If you want to thin it a bit at any point. Add more cream. For thicker. Add more peanut butter.
This will taste pretty much like peanut butter, but have a lighter, softer texture (like a slightly thick whipped cream).
Maybe this counts as a mousse? I don’t know, I’m not a doctor.
Remember, your cream and peanut butter may vary in carbs, sugars, etc. The one I’ve mostly used is a random store brand (because cheap) that happened to be 1g carb (1g sugar) less than JIF creamy peanut butter (and same fiber count, so 1 net carb less), but use what you are comfortable with. Today I actually tried this with JIF and found, for some reason, it took longer to thicken up, but still worked. I was using a bit less peanut butter than normal, but I also thought I was using less HWC, but the ratios could have been off. I’ve just been winging it, and previously it seemed just getting in the ballpark allowed the whole thing to thicken up in about a minute or less.
Could you put other ingredients into this to add additional flavors, sweetness, etc?
