Summer (yellow) squash "egg fu yung"' "cake" "latke"

whatever you want to call it :blush:
not a super complicated or elaborate recipe but thought maybe it could inspire someone :blush:

some of them aren’t super pretty due to sloppy spatula skills but i don’t care what they look like in mah belly :joy:

2 yellow summer squash shredded
2 beaten eggs
1/4c almond flour (you may need more or less depending on the grain/grind of your almond flour…could also use coconut flour but mix in a T at a time as you will need far less)
1oz mozzarella
salt, pepper, other seasonings to taste

  1. shred squash (i used a cheese grater…a food processor with a shred attachment works too)
  2. squish out as much water from the squash as possible (i used cheesecloth)
  3. mix in beaten eggs, seasoning, and mozzarella
  4. mix in almond flour a T at a time until it mostly holds together.
  5. spoon into pan with hot oil (i used avocado) and flatten to a round ish shape
  6. flip when edges are starting to turn brown.
  7. remove from pan and eat :slight_smile:

i topped mine with beef, cheddar, and sour cream

next time i’d add more salt and maybe a little more almond flour

@Fiorella - 2 diff stores after work and no rutabaga! :rage:
these will be good under a runny egg tho :wink:

Looks delicious. We’ve got our first summer squash picked from the garden and I plan to try this out. Thanks for the idea.
