So I ‘officially’ started Keto on March 2nd (had been working on a meal or two keto before that, to kind of get used to things), and so far I’m kind of pleased with how things are going.
For the last three or four years, I have been drifting between 360-380 pounds, and watching as I slowly entered the stages of pre-diabetes, and started nudging into actual diabetes, and that was enough to convince me I had to make a change. I was at 380 lbs on March 2nd, when I began, 366 after one week, 360 after two, and am hoping for 355 in another couple of days when I reach three weeks.
I was planning for two or three meals a day, with some minor healthy snacks (an avacado or a tin of salmon), but instead just haven’t been feeling hungry, and have been eating one meal plus a small bit of snacking a day, not because I was trying to force it, but because there were no hunger pains. Nice!
Are there foods that I miss? You betcha … but I’m finding substitutes, and while I don’t love the act of cooking, I sure do love some of the results. Just made a keto meat spaghetti sauce last night that is the best sauce I’ve ever tasted, and thankfully discovered today that I am one of those people who enjoys shitaki noodles just fine, so I’ve replaced my spaghetti. (As an aside, those things are low carb and low calorie, but do they provide any actual heath benefits besides what they lack?)
Right now am allowing myself one frozen Real Good chicken-crust pizza a week, but will eventually reach the point of trying some of the homemade keto pizza recipes available. But the more I have foods that I enjoy, the less I am bothered as much by cravings, so great stuff here! Looking forward to getting some of this darn weight off.
