Started March 2nd, Going Well so Far

(Jon) #1

So I ‘officially’ started Keto on March 2nd (had been working on a meal or two keto before that, to kind of get used to things), and so far I’m kind of pleased with how things are going.

For the last three or four years, I have been drifting between 360-380 pounds, and watching as I slowly entered the stages of pre-diabetes, and started nudging into actual diabetes, and that was enough to convince me I had to make a change. I was at 380 lbs on March 2nd, when I began, 366 after one week, 360 after two, and am hoping for 355 in another couple of days when I reach three weeks.

I was planning for two or three meals a day, with some minor healthy snacks (an avacado or a tin of salmon), but instead just haven’t been feeling hungry, and have been eating one meal plus a small bit of snacking a day, not because I was trying to force it, but because there were no hunger pains. Nice!

Are there foods that I miss? You betcha … but I’m finding substitutes, and while I don’t love the act of cooking, I sure do love some of the results. Just made a keto meat spaghetti sauce last night that is the best sauce I’ve ever tasted, and thankfully discovered today that I am one of those people who enjoys shitaki noodles just fine, so I’ve replaced my spaghetti. (As an aside, those things are low carb and low calorie, but do they provide any actual heath benefits besides what they lack?)

Right now am allowing myself one frozen Real Good chicken-crust pizza a week, but will eventually reach the point of trying some of the homemade keto pizza recipes available. But the more I have foods that I enjoy, the less I am bothered as much by cravings, so great stuff here! Looking forward to getting some of this darn weight off.

Yes welcome to the forum, Jon. :slightly_smiling_face:. I too started KETO this year, brand new decade, great time to start!! I started on the 1st of January. I ate a huge chicken parmie with chips and gravy on the last night of 2019 and then thought " Right, let’s do this".:joy:. There are lots of yummy food options on KETO that keep you full and satisfied. A diet, but let’s say lifestyle ( Cos that’s what it is) where you can eat yummy cheeses and bacon and eggs ect. Sounds amazing. It’s amazing how our bodies change from going KETO. Keto spaghetti sauce. Mmmmmm, would love your recipe. My weakness was always spaghetti bol and I want to do it with zucchini pasta and mince with a good keto friendly sauce. Congrats on your weight loss so far. You’ve got this. Reach out as much as you need. Cos people are always here to help.:slightly_smiling_face::unicorn:

Not really my recipe, I used this one, https://ketocookingchristian.com/homemade-italian-meat-sauce-keto-and-low-carb/ and just tweaked it a little bit with lots more garlic, a little oregano to go with the basil, and a dash of crushed red peppers to add a tiny bit of heat! First spaghetti sauce I was ever willing to eat by itself, no noodles required.
