Snapper with Tonnato Sauce

Tonnato Sauce is. Northern Italian sauce, typically used with “plain” proteins, like tenderloin and chicken breast. This is a cold sauce that has a bite, which helps to add flavour to the dish. In this recipe, it is paired with a fresh BC Snapper filet.

Ingredients of the tonnato sauce is tuna (packed in olive oil), capers, anchovies (packed in olive oil), fresh lemon juice and homemade mayonnaise.

Blend until you get a smooth sauce.

Add beef tallow (or other fat) to pan

Salt, pepper and sprinkle dried thyme on fresh snapper filet

Add fish filet to pan

Flip to other side when done, and add fresh squeezed lemon juice on cooked side

When fish is completely cooked, remove from pan immediately, and CAREFULLY…fish will fall apart very easily

Final plating: layer of tonnato sauce on bottom, with a snapper filet on top

Fish should be flakey, but still very moist inside

The tangy tonnato sauce makes a good pairing with the delicate and buttery snapper filet
