Savory cheesecake snacks

1 brick cream cheese (room temperature)
1 egg beaten
2 tbsp sour cream
1/2 cup shredded cheddar cheese
1/4 cup bacon bits (I used Kirkland brand)
1/4 cup chopped green onion

Preheat oven to 350 degrees. Mix cream cheese, sour cream and egg together using a hand mixer. Mix in the remaining ingredients by hand. On parchment lined baking sheets, drop mounds of the mix, 1 TBSP each. Bake for 15 minutes or until set. The snacks will feel springy to the touch when done. They shouldn’t really brown at all.

Serving Size: Makes 21 Snacks

My favorite is to make a regular cheesecake base, leave out the vanilla and sugar completely. Instead saute a mirepoix with some spices and toss in some lobster/crab/other shellfish. Fold into cheesecake base and bake. Savory cheesecake.

I used to make this with a ritz cracker crust before going keto. Now I just don’t add a crust at all, but a macadamia crust that is not sweetened would be nice. Other nuts would work as well.
