I don’t know if requests are allowed. If not I understand a moderator will kill this post.

I would really like to have some “Stick in Butter Rice” Keto friendly. Does cauliflower rice work for it?

Ideas would be appreciated. I can absorb the carb count from the soup and broth. It’s the rice that is a no go.

You might approximate the flavor with cauli rice or the miracle noodles. Calling @Fiorella, a recipe experiment is waiting for you!

The main issue with duplicating the recipe is that cauliflower rice isn’t going to absorb any fluid.

What I would do as a start would be to sauté onion in butter and a little red cooking wine and set aside. Then sauté maybe 2-3 cups of cauliflower rice with butter. Then add the onions, some beef bouillon and salt or whatever other seasonings you like, and cook it all together until the flavors mix.

Cauli doesn’t absorb lots of water like rice does (it already has its own moisture). So the trick is to imitate the carmelized onion and butter flavor. I would say best thing to do is first make a “beurre noisette” or hazelnut coloured melted butter. Do this by melting butter (or ghee) in pan, and continue cooking (browning) it in the pan to get a hazelnut colour to your desired level of darkness. Throw in finely diced shallots or onions, and continue cooking until onions are tender. Then add riced cauli, and cook until cauli is done to your desired level. Add salt and pepper to taste.

Can you make beurre noisette from ghee? I was under the impression that the color was provided by browning the solids in the butter?

I’m not aware of any dairy intolerance so I’m going to use butter. Since I’m a culinary philistine I’ll read her answer. :slight_smile:
