Anyone have a radish salad recipe? Like “potato” salad?

Were you thinking about substituting radishes for potatoes in potato salad?
I just found this one that might inspire you:

The one I tried isn’t anything like “potato” salad but it’s a nice break from the usual lettuce salad:
Shaved Radish Salad with Walnuts
“Shave” (cut, Mandoline or use a 1 mm slicing attachment) as many radishes as desired
sprinkle with chopped walnuts
toss with oil, vinegar, coarse salt & pepper

I didn’t care for it.

The radishes got soggy and watery. While I like my potato salad moist, the texture of the radishes didn’t appeal much to me.

I had thought that if I try it again, I’d like to roast the radishes instead. Also, I had thought maybe I might like to try using some daikon radishes instead of the little red fireball types. Yes, I know, they’re supposed to get more mild when you cook/roast them, but to me, they still have a wang I don’t much care for.

If the texture had been right, I might have messed with the flavor profiles to see if I couldn’d find something I liked, maybe cajun. I still think I might have had better luck with the texture roasting but I’m sure I’d have been doing a lot of checking along the way as they would probably turn dry and tough if they were roasted too long.

I haven’t tried the recipe I must confess but I am a fan of a roasted or fried radish. They don’t take very long so you do need to watch them. I don’t think they taste like radish at all but I have noticed a warm glow after eating them. I’ve never seen a daikon. Maybe we don’t have them in the UK.
