Quick, Easy, LAZY, Anything Goes Microwave Casserole

I got the idea from microwave coconut flour mug bread, and it came out great.

The beauty is you can pretty much use any cooked meat, cooked veg, and cheese you like, or have on hand.

Here’s what I made today. (Not actually measured at all)

In a regular soup bowl I combined:

About 3 oz. cooked bulk Italian sausage and sautéed onions
2 eggs
About 1/4 cup mozzerella cheese
About 2 tablespoons coconut flour
1/2 teaspoon baking powder
Salt, pepper, onion powder, garlic powder to taste

Mix well
Microwave for 2 minutes (microwaves will vary of course)

I topped it with hot sauce and sour cream, and it was delish. :smiley:

The beauty of the concept is you can do pretty much whatever you want as far as meat, veg and seasoning.

I love recipes like this, since I often cook without recipes anyway. If that makes sense.

So eggs, cheese, a little coconut flour, baking powder, spices and whatever protein or veg I’ve got?

Have you tried baking a larger version of this in the oven? I go to lots of potlucks, so looking for ideas.

I did.

1 lb pork sausage (plain) sautéed with onions (seasoned with salt, pepper, onion powder, garlic powder)
8 oz lightly cooked broccoli cut up fairly small

In a bowl I mixed:

6 eggs
1 cup shredded cheddar
1/4 cup coconut flour
1 tsp backing powder
1/2 tsp ground cinnamon

Grease a 9x9 baking pan and put the sausage in a nice layer. Then a layer of broccoli. Pour egg mixture making sure to get good coverage.

Top with some more shredded cheddar and bake at 375 degrees or until golden brown and it passes the toothpick test.
