Pulled pork using sugar substitue

Hi everyone,
New to keto and I’ll be entertaining a large amount of folks next weekend. I’d like to do a pulled pork in the crockpot. One Keto recipe I found lists sugar substitute. What sugar substitute would work well with pork? I haven’t purchased anything like that since I’m trying to keep it very simple for right now.

Liquid stevia in my cooking when I need a hit of sweet. Helps with curries, peanut dipping sauces, tomatoes sauce for zoodle lasagna… so I see nothing but good things coming to that pork if you drop 15-20 drops in. Our bottle is lasting a long time with semi regular use.

Liquid stevia - interesting! I don’t think I knew that was a thing! Whole Foods or Amazon?
Any brand recommendations or are they all similar?

I personally have a bottle of Now Liquid stevia from Amazon. I think it’s called Better than or something. My label got into an accident with a jug of water but, you should be able to find it easily without the full name. It’s lasted me months of fairly regular use and it has months left in it. Liquid stevia does tend to be stronger easily so, less is often more. You can also buy small bottles of liquid stevia from some regular grocery stores like Wal-Mart, meijer, safeway, fred Meyer’s, whole foods.

Got ours from Amazon, green bottle can’t recall babe. Get the dropper if u can, not the “Mio” or “Crystal light” style squeeze as way too much can come out and ruin a dish!

oh thank you - just looking at amazon and saw the different types of bottles. will look for dropper!

Just my take but I have never used sugar on pulled pork. Not sure it’s needed.

But you could powder some erythritol and give it a try

It definitely depends on location. Walmart for example, out of 5 I’ve been to only 1 carried a sweetener brand called Swerve with erythritol. 2 carried liquid stevia. All 5 had granulated stevia.

A word of caution, don’t use it in your whole dish. Try a bit first.

Like Matt, I don’t use any sugar or any other flavorings for my slow roasted pulled pork. I season with salt, garlic powder, & pepper. Maybe cut up an onion to line bottom of the crock pot.

I will sear the pork butt in coconut oil in the cast iron pan first (sear every single side on high heat for a minute or two) and then lay it on the cut onions. Last time I added good sized chunks of butter all over the top of it and let that melt in over the course of the slow roast.

The fat in the pork butt and the butter is all the flavoring that bad boy needs.

Thank you Matt and Robert! I was vegetarian for 15 years and then added meat back into my diet about 2 years ago. I think I’ve made pulled pork maybe twice in my life so I guess I assumed it was supposed to be sugary - duh! No need!! THANKS!

I guess I was thinking of the sauces that typically accompany pulled pork. I do like a sweet/tangy sauce.

Or at least I did pre Keto. Haven’t attempted pulled pork post Keto. Maybe I should give it a try now that my sugar cravings are all but gone.
Could be a big eye opener.

Man… I wouldn’t use sugar either… but then I wouldn’t cook it in a slow cooker…

You know, when your options are limited, a slow cooker can turn out a pretty good pork butt. No, it won’t be the same as a hole in the ground, but still nothing to turn your nose up at either.

Lots of options, depending on how low carb you want to go.

A big hunk of pork and even adding real sugar (reasonable quantity!) isn’t going to carb it out of keto. Proportions matter.

I would use erythritol for guests because they are probably used to sweeter flavours than I am.

For myself, I would leave the erythritol out and just use tomato purée which would sweeten enough.

I’m not a purist, and flavour trumps tradition IMHO, so I could happily use fruit juice too, if appropriate (remembering my comments about proportions above).

I once did a great ham in cider and OJ, then just let other people take the liquid, while I had just meat. Actually, I should do that again. Soon.

Apple cider vinegar is not unusual in BBQ circuits.
