Praise Lupin Flour

I absolutely love it. It only has 2 net carbs per 1/4 cup. Yesterday I fried chicken tenders in it and I could barely tell the difference in it and wheat flour. Here is a muffin recipe I came up with that I love:

1 cup almond flour
1/2 cup flax meal
1/2 cup Lupin Flour
1/2 tablespoon baking soda
2 teaspoons cinnamon
2/3 cup erythritol or sweeten to your taste with any Keto sweetener of your choice
4 eggs
1/2 cup almond milk
1/2 cup coconut oil, olive oil, or butter

Blend everything and bake at 350 for 20-25 min. I personally use egg whites and olive oil because they come out moister.

As for the chicken, I treated it just like regular flour. Next time I might add a bit of baking powder or whey protein to give it some extra crispiness.
