Pork Rind Pizza Crust

(Diane) #1

This is the first pizza crust I made after I started eating ketogenically. I’ve tried several others over the past year and a half and I keep coming back to this recipe as one of my favorites.

Here is the link to the YouTube video that I first discovered: https://youtu.be/k_ndJ0_1yMk

This is the exact recipe from the video:

Ingredients
1 cup crushed pork rinds
6 oz shredded mozzarella
3 eggs
8 oz cream cheese, softened
1/3 cup grated Parmesan cheese
2 tsp garlic powder
1 TBS Italian seasoning
1 tsp oregano

Note: I add one less egg, I use about half the Italian seasoning and omit the oregano since I didn’t have any the first time I made this recipe.

Directions
Preheat the oven to 425F.

Blend together the softened cream cheese and eggs until thoroughly combined. Add in all the other ingredients and mix well. This is a very wet dough.

Put down a layer of parchment paper. Place the dough on the parchment and cover with a second layer of parchment paper. Press and smooth the dough into a thin, even layer. Remove the top layer of parchment paper and place on a baking sheet or pizza pan.

Bake the crust without toppings for about 22 minutes. Remove from the oven and let it cool for 10 minutes before adding sauce and toppings. Put the pizza back in the oven and bake for an additional 10 minutes, until the cheese is hot and bubbly.

Thank you :slightly_smiling_face: My GF and I actually wanted to try this with our next pizza. She has actually made a few pizzas lately just using the standard mozzarella, cream cheese, and almond flour bread, and they have been really good… But we are always looking for something new, and maybe even better :slightly_smiling_face:
