Pork rind breaded side pork (uncured thick sliced bacon)!

1 70g bag pork rinds
1 XL egg
1 Tbsp avacado mayo
4 thick (~1/4") slices of side pork

  1. Pre heat oven to 400 F.
  2. Crush pork rind into bread crumb sized crumbs.
  3. beat egg and mayo into an egg bath.
  4. Dip a slice of side pork into egg bath.
  5. Then dip it into the crumb bowl.
  6. place on a parchment lined cookie sheet.
  7. Repeat steps 4, 5 & 6 till you run out of crumbs or slices of side pork. I got 4 well breaded slices from one bag.
  8. Place cookie sheet in oven for 10 minutes, turn slices and put in for another 10 minutes.
  9. Enjoy!

*Add preferred seasoning/spices to crumbs before breading pork slices, or once placed on cookie sheet if you want to mix them up. I did 2 Cayenne and 2 Chipotle.

Serve with your favorite keto friendly sauce, cheese or whatever.

Next time I’m going to try adding some parmesan cheese to the breading crumbs, I’ve heard that’s amazing.
