1 70g bag pork rinds
1 XL egg
1 Tbsp avacado mayo
4 thick (~1/4") slices of side pork
- Pre heat oven to 400 F.
- Crush pork rind into bread crumb sized crumbs.
- beat egg and mayo into an egg bath.
- Dip a slice of side pork into egg bath.
- Then dip it into the crumb bowl.
- place on a parchment lined cookie sheet.
- Repeat steps 4, 5 & 6 till you run out of crumbs or slices of side pork. I got 4 well breaded slices from one bag.
- Place cookie sheet in oven for 10 minutes, turn slices and put in for another 10 minutes.
- Enjoy!
*Add preferred seasoning/spices to crumbs before breading pork slices, or once placed on cookie sheet if you want to mix them up. I did 2 Cayenne and 2 Chipotle.
Serve with your favorite keto friendly sauce, cheese or whatever.
Next time I’m going to try adding some parmesan cheese to the breading crumbs, I’ve heard that’s amazing.
