Pork Butt/Enchillada Sauce?

Hi everyone. When i end my fast I would like to cook a pork butt in enchilada sauce in either the crockpot or instant pot. I don’t know if i’m going to have problems with it burning/scorching or anything like that. I did search for some recipes on pinterest/google but i really didn’t find anything. Maybe i need to add some water to the enchilada sauce so it wouldn’t scorch? Anyone have good base recipe i could start from?

Pork butt will take longer than chicken, but the theory is the same.

I usually lay about 4 slices of bacon under my butt and let it roast all day no added liquid. You could always add the sauce closer to the end if you are worried.

I’m not sure what kind of enchilada sauce you’re referring to. When I lived in Oaxaca, the sauce for enchiladas was quite thin. The online recipes for enchilada sauce seem to indicate a fairly thin sauce as well. Most call for flour, but I assume you aren’t using flour. Usually the moisture in the meat results in additional liquid.

My point being, I don’t see why enchilada sauce would be more likely to scorch in a slow cooker than any other sauce, or even meat cooked without sauce. Tomato sauces can scorch in a slow cooker, but only if the heat is too high for a long time. You might want to start the pork on high and then turn the heat down in an hour or two.

I’ve never used an instant pot, so I can’t comment on that. Good luck!

Ya i wasn’t sure it it would but i was playing it safe and asking some of the experts on here :).

Good point if your afraid of it scorching this would be a good idea.
