I grew up in the 70s with only Colby-Jack in the fridge so I consider myself to be from a broken home. It wasn’t until after college that I discovered cheddars so sharp that they could arm wrestle a sandwich and win. I’ve never looked back.

Let’s talk about the cheddar in your life, where do you fall on the sharp-o-meter? (vote for your fav)

  • American cheese (seek help immediately)
  • Mild/Medium cheddar
  • Sharp cheddar
  • Extra-sharp cheddar
  • Ultra-sharp cheddar (gourmet, aged many years)

Yum! What a lovely topic… I like my cheddar so aged that it’s got those crunchy little salty bits in it. And if you want to know about Camembert, well - it should be old enough to walk around by itself. Smelly socks, baby…

You got my attention with the picture! Tillamook is one of my favorites. They make some good cheese.

One of my hopes is that someday, when I have the room to do it, I might be able to start making cheese again, even the aged cheeses.

I love Aldi’s aged cheddar. $2.49 for 8 ounces. Its aged for over 12 months, is firm, and only slightly dry so isn’t crumbly.

I have never seen ultra-sharp cheddar. I’ll have to check out Whole Foods or a local gourmet cheese shop. I grew up eating longhorn cheese, which I just Googled and found out it’s a domestic Colby.

It’s not actually called that, I just used the word to describe cheddars aged longer than 1-3 years. Ask at the cheese counter to taste something older than 2 years and you’ll get an idea of what I mean.

Aged cheddar, aged gouda, brie, & aged goat cheese can all be found in my fridge. Love them all. Goat cheese is a short aged thing. it comes more solid when aged and is hard to find. Luckily there is a cheese warehouse not far from me, where they get it from France.
