I just experimented for lunch
Makes 12
1 Cup of oat fiber
1 Cup of ground flax
8 Tablespoons HWC
4 Large eggs
4 Tablespoons olive oil
1 Teaspoon baking powder
1/2 Teaspoon baking soda
1/4 Teaspoon salt
1/4 Teaspoon black pepper
1 Teaspoon Italian herbs
1 Teaspoon dried onion
2 Teaspoons dried parmesan
1/4 Cup grated Mozzarella
1 Slice of hard salami for each muffin (cut into 3)
Mix all wet ingredients well, and herbs, onion, parmesan, salt and pepper. Let it soak for 10 mins while measuring dry ingredients. Add dry ingredients a few spoons at a time and mix well. Add to muffins cases and bake for 20 mins at 350
