Pepitas - Spiced pumpkin seeds

This is a great alternative to chips or nuts - or in particular bombay mix.

You want a generous plug of good oil - olive or coconut, 100 - 200g green pumpkin seeds and the spice blend of your choice - but anything with cumin in should be good, plus some salt.

Fry the spy in the oil as the oil warms, throw the seeds in, cook them hot for a minute or two then turn the heat down and put a lid on. You want the seeds to pop a little like popcorn, so keep sharing the pan. Cook for a couple of minutes until they have popped and toasted, add some good flaky salt and transfer to a bowl. Eat as soon as they have cooled enough to not maim you (about 3 minutes - ask me how I know.)
You can also add toasted dried coconut for an added flavour dimension.

One word of warning - these are roughly as moreish as crack.

A perfect salty drinking snack.

Just bought 6x 750g bags of roasted salted pumpkin seeds from Costco. Adding 50g of it each day to my regimen.
These little things are nutritional powerhouses…

they really are and they’re absolutely delicious if you toast them a bit.
