Pecan Pie Bites

Made these last week - they don’t last long.

Short Version.

  • 125g chopped Pecans (or your nut(s) of choice)
  • 43g Butter
  • 58g Double Cream
  • 27g Sweetener (I use Total Sweet Xylitol)
  • 1 tsp Vanilla extract
  • 25g Dark Chocolate
  • Himalayan Pink Salt (optional)

Steps

  1. Brown Butter in a pan over a medium heat, add cream and combine
  2. Reduce heat, add sweetener and vanilla extract and whisk for 5 minutes until it starts to thicken
  3. Take off heat, add chopped nuts and mix.
  4. Spread into a lined tin and pop in the freezer for 5-10 mins
  5. Melt some dark chocolate, and drizzle/spread over the mix and let set (freezer or fridge) - Add salt on top if you want

They look great! Is that actually 125 pecans or 125 grams?

I was thinking the same! :smile: … My wife likes Pecans, but wow, that’s a lot of pecans!

Edit: It actually shows that way on the recipe page as well?

Yeah, it’s a lot easier to measure a cup than to count out 125 nuts. But I think the recipe should be 125g.

Oopsie. Should read 125g. I did convert to grams as cups are ok for nuts but I find weird for things like butter. In the UK, we are conditioned to use metrics :smile:
