Peanut Butter Banana filled chocolate KetoCandies

(8 year Ketogenic Veteran) #1

Whipped 1/2 cup peanut butter with 2 tablespoons butter, 1/2 cup heavy cream, 1 tablespoon Truvia,
and 1 teaspoon banana extract.
Divided into a silicone mold and froze.

Next, melt 90% chocolate with coconut oil. I used a 3.5 ounce bar and melted it with equal parts coconut oil. Add 2 teaspoons Truvia.
Pop the frozen peanut butter filling out of your mold.

Add melted chocolate to the mold. Replace the peanut butter filling. Cover with chocolate.

Freeze until solid.

I’ll bite into one and show you it in all its glorious splendor as soon as it’s done…
HERE YA GO.
ERMERGERD.

Someone get over here and help me eat these!

Yum!

My mold was HUGE. I calculated mine at 6 net grams carbohydrate per candy heart which means there are 36 grams net carbohydrate per recipe.

So, divide accordingly. I use natural (unsweetened) peanut butter btw.

Just so you know @Brenda, I made these and they were awesome. Of course no evidence of this ever happening remains. The coconut covered chocolate candies are next, later this week.

I made these (minus the banana extract) in a silicone mini muffin pan and the results were amazing. A peanut butter cup that is just the right size for a snack… I’ll try to remember to post some “food porn” pics of them later. Thanks for sharing the keto candy Brenda!
