Here’s an easy recipe for pancakes that you can either eat a stack of or use as bread for bacon, egg, and cheese sandwiches. I use a griddle and make up a bunch and freeze them. This is the base recipe. You can add vanilla for sweet creations or keep them plain for sandwiches. Use your imagination.
1/2 cup almond flour
1/2 cup full fat cream cheese
4 eggs
1 tsp baking powder
Blend all ingredients in a blender and let it set for about 10 minutes so the almond flour can absorb the liquid. These aren’t very fluffy so it’s essential to let the mix set to thicken a bit. Cook on a griddle like you would a regular pancake.
