Has anyone tried paleo style onion rings before with almond meal?
Similar to this recipe?
How’d they turn out?

I haven’t tried them, but I just got a deep fryer, so they may be on the agenda. Although I wonder if pork rinds would make better “breading?”

I did wonder that myself, I might give it a go. Shallow fry in a pan should do it.

We tried coconut flour on shrimp. An egg wash first did little - most of the flour came off. Dipping in HWC was better but the coating still came off and was kind of thick. Still experimenting - those were from following someone else’s recipe.

I haven’t tried this recipe but keep meaning too! I’m sure it would work with onion rings too.

When breading, try the " Dry, Wet, Dry" method. Wet food, toss in breading. Wet again and coat with breading a second time. It works petty good at keeping breading on.

I see your OP says ‘paleo’, but fyi for those keto, onions (except green) have quite a high carb content. For a medium sized white onion (or 3/4 cups) comes to about 9 carbs, or about 1 carb per SLICE :astonished:
