Olive oil, mandarin and almond sponge

I converted this recipe from one I found on Food52.

Ingredients
90g EV Olive oil - a nice fruity one.
100g ground almond
4 eggs
100g xylitol or granular sweetener of your choice.
Pinch salt
Handful of chopped nuts of choice.
1 Small mandarin or satsuma orange (you’re only using the zest - find a child to eat the fruit if you’re resentful of waste)

Set oven to 175c

Weigh the oil out into a bowl large enough to mix some cake batter into later.
Zest the orange into the oil and set aside.

Line a cake tin, brush with a little of the oil and then sprinkle some of the seeetener into the base and sides.
Now sprinkle the chopped nuts onto the base.

Put the eggs, sweetener and salt into a bowl.
Preferably with an electric mixer, beat for 3 to 4 minut S until you have a mixture that is about 3 times the volume it was.

Tip about 1/4 of the batter into the oil mixture and fold it to absorb the oil.
Then transfer the oil mix back to the rest of the batter and fold in. Add the ground almonds and fold further to combine.

Tip into cake tin and bake for 30 minutes until golden.

I intend to use this for a birthday cake and will decorating it with some cream cheese with more zest in it.

I’ve eaten a little bit that broke off from one corner :smiling_imp: and I’m wowed by the flavour. It’s really good.
