Oat fiber in meatloaf?

After eating the yummy pancakes made with oat fiber, I’m wondering…can it be used in meatloaf in place of bread crumbs or pork rind keto crumbs? I’m just hoping to use something that won’t increase the protein, since I want to try mozzarella filled meatloaf!

I say go for it, but err on the side of caution. Less is best as far as oat fiber is concerned. And let us know how it goes. I’m curious. :slightly_smiling_face:

Sure, I plan to try it out tomorrow night, quick and easy, husband will like it too. I’ll let you all know. Time to snooze and beat the cortisol second wind :wink:

I’ve been thinking about making a microwave coconut flour mug bread. Cutting it into thin slices. Baking the slices on low heat until dry. Crumbling into bread crumbs.

It might work.

Or not… :smile:

I use ground flax in meatballs and burgers at a rate of 1 tablespoon per 2 ounces of meat. Its delicious!

So, here’s a basic summary of the meatloaf.
20 oz ground turkey 85% lean
1 egg
spices
1/4 cup oat fiber
Mix all, on baking sheet make a “boat” of half the mix and fill with mozzarella (or other cheese). Try to cover the cheese and seal it inside. I used a mix of Sweet baby ray’s buffalo wing sauce mixed with some sour cream to pour over the top. Baked for 1 hour at 350F

Result: Lots of the cheese came out (my boat needs thicker walls) and I would cut the oat fiber to just 2 T because it was too dry with 4T (1/4 cup). But overall, a win and even my non-keto husband was licking the plate!
