Nuts on keto

(Jenn W) #21

Everyone is different! If you are able to handle nuts daily then go to it! Better than candies and pies!
I would say though that if you are Keto for weight loss when you stall the nuts will likely have to go.
I have a bag of salted peanuts in shell at home that have lasted about two months… …

Sorry but what I wanted to continue saying just reads horrible and is putting my mind straight to the gutter. Haha! I’m terrible!

Savoury @betsy.rome
Here are the ingredients from the recipe - I guess you could vary it a bit.

250 g Streaky Bacon Rashers
4 cups Assorted nuts (Almonds, Hazelnuts, pecans,Brazil, macadamia and cashew nuts)
2 tsp unsalted butter
0.5 tsp Ground Cumin
0.5 tsp Cayenne pepper
0.5 tsp Ground Cinnamon
1 pinch Freshly Ground Nutmeg
1 tsp Salt

Method:

  1. Grill the bacon in a greased oven tray until crispy
  2. Remove from the fat and cut the rashers into small lardons. Reserve the fat for the next step
  3. Toast the nuts in a large, heavy-based dry pan until they go golden
  4. Add the bacon fat and butter and cook until the nuts begin to darken
  5. Add the spices and fry them in the butter until they become fragrant
  6. Now add a few drops of water and the bacon and toss everything together
  7. Tip the nuts back onto an oven tray lined with paper towel and pop them back in oven for another 5 minutes at 160°C to dry out properly. Cool and store in an airtight container

(The second time I did this I left out the paper towel - it grieves me to see all that buttery goodness go to waste)
This is one of the recipes from Real Meal Revolution

I also pay very close attention to the ingredients. So many nuts are roasted in vegetable oils or peanut oils (I avoid peanuts). I once bought a different flavor of macadamia nuts from just salted and was shocked when I realized they had added cane syrup to them. No wonder I thought they were laced with crack!

Where do salted peanuts register on the keto scale?

Straying off topic but the gutter can be a lovely place

This past fall I gathered walnuts from the side of my country road where they had fallen from a couple of trees planted along someone’s fence line. I picked up hundreds! They are so good and fresh. I might crack open 6 in a day and it takes some strength of character to stop at that, they are so tasty.

I dont eat nuts but if I do I try not to go over 4-5. Sugar free peanut butter? Nope. Can’t have it near me, because I will eat it all. Nut butters no problem. I have a small jar of almond butter I am sure is ready for a science lab.

I can easily over eat nuts and I believe they cause me ( not everyone) inflammation in my bowel. It’s probably just as well that I avoid them because I will eat them past the point of hunger.

Trader Joe’s sells packages of some types of nuts that contain a bunch of individually bagged servings. It costs a little more, but if I grab one tiny bag of almonds, then I know that’s exactly one serving and I stop when I finish it. I have no will power otherwise, especially if it’s something like macadamias.

@BantingBen, I was trying to bookmark your YUMMY recipe and my fat finger accidentally hit the flag button next to it instead. I am sorry. :weary:
I messaged @matt to let him know of my mistake. I hope I just haven’t caused a mess for you & Matt can get it removed our tell me how to remove it. My apologies.

(matt ) #31

I don’t see anything for the admins to address. Not sure what happened. But looks like it’s all good.

(joievawter) #32

Phew! Thank-you for your help @matt.

Nuts are an important part of my feasts. They ensure satiety during the fasts. Snacking for me is hot tea. :yellow_heart:

(Ben) #34

As you’ve bookmarked it, I’ve edited above to add the method

(Roxanne) #35

I like that idea, @jfricke. And I just found my old nutcrackers when clearing out a kitchen drawer

I also usually buy unsalted nuts…I find it easier to overeat the salted ones.

(Jessica K) #36

Nuts keep me sane. I’ve found that this WOE has a distinct lack of “crunch” in foods and nuts satisfy that need.

I can’t not think this is all dirty. Mind straight to the gutter. sigh

(Jenn W) #37

Glad to know I’m not the only one!

My peanuts are there for salt cravings mostly. One can last me a bit cause I’m determined to not waste the salty goodness!

Yup I’m a salt addict.

Cashews are my nemesis. I have no control with them and will eat all in sight if I buy them

(betsy.rome) #38

Ooh, love the combo of savory / hot with cinn & nutmeg! gonna try this for sure, thanks.

This is getting risque.

That’s why I crave crunchy nuts!
Drives me nuts sometimes :smile::joy:
