Not specifically keto but what i had for dinner

Had prime rib for dinner last night but wanted something different tonight. I made pan blackened catfish. It was great but there’s a debate over the downside. Directions said to heat a cast iron pan on high for 10 minutes. (any longer and it would be molten). You might want to add one more step: get a smoke ejector from the firehouse or oxygen breathing equipment. It will be days till the smoke clears.

It definitely was low carb and the full stick of butter for three filets I ate added some fat. I’m pretty sure the spices didn’t have carbs and I didn’t make anything besides the catfish. (no rice or beans). I didn’t have any Thyme but I had plenty of “time”

That was funny! Next time put the skillet on the BQ outdoors and do it there!

Holy Crow, Jim, I guess so… I’ve seen recipes where they say get the butter smoking hot in the pan, and that sounds good enough to me; the 10 minutes thing = scary.

This looks delicious (said the fasting woman), but tell me, please…how oh how do you all keep from overeating protein when faced with a delicious plate of meat!!! This is such a tough thing for me to refrain from…I need to eat more fat I guess.
Does anyone ask for only half of the meat/entree to be brought to the table when dining out?

Blackened anything is always gonna smoke. I second the idea of doing it outside of your grill has a side burner. I fry fish outside as well to avoid stinking up the house.
