A good way to use all those nuts that you bought at costco. I think the only key to making everything stay in one piece is the 100g of flaxseeds and I would guess that you could substitute just about anything else so long as you end up with 600g of total nuts.
For the lazy:
100g almonds (I used roasted salted)
100g pumpkin seeds (again I used roasted salted)
100g sunflower seeds (shelled)
100g walnuts
100g whole flaxseeds
100g hulled hemp hearts
1/2 cup oil of choice (I used olive but MCT, macadamia, butter, bacon grease or anything else would work too)
2tbs salt
5 large eggs
Optional: Spices. Pumpkin spice, chinese 5 spice, cinnamon, maple, vanilla, black pepper, or anything else would probably be great! I didn’t spice mine.
Couldn’t be easier: Mix it all together, put into a loaf pan lined with parchment, and bake at 325 for an hour. Allow to cool. I divided it into 16 ~2 ounce servings that yield the following macros:
- 248 calories
- 18g fat
- 7g carb - 4g fiber = 3g net carbs
- 11g protein
These would make a great brie (or similar goopy cheese) delivery system.
