Heat 2 cups shredded Mozzarella (whole milk low moisture) in a small pan until the cheese is bubbling and the edges are lightly brown. Let it cool enough for the cheese to set. Place on a pizza pan or stone, I use parchment paper for some pans to prevent sticking. Spread your favorite sauce (I like pesto), lightly sprinkle with extra shredded cheese, place cooked toppings (pepperoni, sausage, mushrooms, spinach), & sprinkle on Italian seasoning. Bake at 400F until toppings are warm & top cheese is bubbly. Cool enough for cheese to set, then eat!
I’m eating ZC this month and used baconaise instead of pesto or pizza sauce, tasted awesome but was over the top greasy
