Am I the only health-conscious person on the planet who has cheerfully eaten their weight in full fat dairy many times over without the slightest guilt or fear? Seriously, I’m pretty sure I’ve consumed at least half a pound of dairy products a week, maybe closer to a pound, more or less every week of my life. Of course the confirmation is always nice, but I’ve always felt certain that real cheese is not my enemy.

I’m willing to bet very few keto’ers ever had an issue with real dairy and it’s wonderful fat content.

While this is great news as far as the validation of the concept that fat does not increase the risk of heart disease, something that the keto community has known and practiced for years. So, while cheeses and butter are great keto foods, just keep in mind that while an 8 ounce glass of full fat milk contains 8 grams of fat, it also contains 12 grams of carbohydrates in the form of lactose (milk sugar) that will knock you out of ketosis.

Is that still true if it is the only carb you consume that day? I miss milk so much, it is the onky thing I miss, that I am thinking of doing a glass of milk a week, kinda like a milk fast but I can eat all the fats and meats I want too, nothing with carbs at all just in case.

It depends on your personal carbohydrate limit. But theoretically, even 20 grams of pure sucrose—if that’s all you have that day—still won’t spke your insulin, though I would advise avoiding all sucrose for other reasons.

ETA: Of course the milk sugars are lactose and galactose, which aren’t quite so bad as sucrose.
