Need assistance

I’ve been on Keto for 3 days now, so I’m new to all of this. My question is do I absolutely have to eat veggies? I’m finding it very hard to find choices that will keep me at 20 carbs or below. Thanks in advance for any advice. - Brandi

Are you counting total carbs or net carbs? I don’t think you would have a problem if you counted net carbs.

I’ve been counting total carbs.

Stick with spinach, or mixed greens. Very low carbs and good for you. Others will feel differently.

I routinely eat brocolli, cauliflower, green beans, asparagus, Brussels sprouts, cabbage, some carrots, Greek salad, Ceasar salad, mixed salad with lettuce onions peppers celery cucumber. Don’t forget vegetables also have fibre so you can deduct that from your totals.

Veggies are not mandatory. There are plenty of us that thrive on a carnivore keto diet. I only eat vegetables if I want to which is not very often.

I eat 1/4 cup cooked twice a day ( lunch, din). Keeps me well below on carbs and I include a tablespoon of butter or bacon grease!

Most bags of frozen mixed veggies( 12oz to 16oz ) are under 20g net carbs :heart_eyes:

I haven’t eaten veggies in almost a month. Feeling great and don’t plan to go back to veggies any time soon.

Spinach, chard, lettuce, and arugula are probably the safest bets. They have virtually no carbs in any consumable quantity–especially raw.

You certainly don’t HAVE to eat veggies, don’t think I’ve had any in 3-4 days, but as others have said there’s plenty you can eat, spinach, rocket, watercress salad with loads of dressing or sprouts & asparagus are usually my go to.

What kind of dressing do you use?

I like my dressings quite sharp so 3 to 2 ratio olive oil & sherry vinegar, 1 tsp dijon mustard, 1 or 2 cloves of grated garlic, juice of half a lemon and either a fresh minced chilli or a handful of dried crushed chillis.

I make my own:

Extra virgin olive oil
Avocado oil
Rice vinegar
Penzey Tuscan Sun spice blend
Crushed Ghost chili
