Anyone have a favorite recipes for coconut bars?

#2

Well I have a homemade Bounty recipe… I liked that coconut filled chocolate bar in my younger years… And it’s one of the few where I could make a pretty good replacement (not like I had to replace it, I didn’t eat it every year or anything, didn’t miss it. but sometimes I got reminded of its existence and the joy I had with it)!

I need to search for the recipe downstairs but I usually do it without much measurement anyway…
Grated coconut, cream, sweetener (not much for me as the other ingredients are already sweet), coconut flavoring (it is a must for me, the original Bounty bar has just that flavor, normal coconut is different. but it’s individual I suppose), I probably use milk powder too nowadays but probably works without as it has cream…? And I pour chocolate on top.
It’s a soft dessert, when I made denser coconut things, that had a lot of coconut oil (I have the recipe for it somewhere too… my SO once ate a little and he got so unwell he never touched it again. I told him it had 100g fat in it, I did…) and chocolate too, again, it emulated a popular quark dessert here. That one used lemon. Coconut and lemon makes a remarkable quark-y flavor!

So, my homemade Bounty is soft but 1. the ratio may help 2. if you close it into chocolate, it may or may not be a problem. It wouldn’t be a bar but little sweets. I have lovely molds for fat bombs and chocolate… But, ratio and maybe extra coconut oil should do the trick.

I made simple, shredded coconut flakes + coconut oil + flavoring/sweetener fat bombs when I was a newbie ketoer, with or without a chocolate bottom, I wasn’t into those but they were edible (and promptly banned due to their fat content. I was just curious about fat bombs but I couldn’t afford them and I preferred my savory peanut one anyway).
I saw a recipe where a tiny bit of cocoa powder was added and it was pretty good.
