I have been playing with getting the right thickness (for me) for my version of Carlshead pizza. I cook the dough on the stove rather than in the oven as I find it much easier.
This is an individual size portion, around 10" in diameter.
Short version
Ingredients – Base ( this is a good size individual portion, about 25cm / 10″ wide )
- 76g Grated Mozzarella Cheese
- 12g Cream Cheese (I use Philadelphia)
- 36g Almond Flour
- Seasoning – I use chilli flakes, dried oregano, cumin seeds, carom seeds and a pinch of salt
Method is the same as carls for getting the dough, melt the cheeses in a microwave for around 30 seconds, add in the dry ingredients and mix/knead into a ball. Roll out (I do mine 2mm thick).
I then put it into a large frying pan on a low heat for around 7 minutes each side before applying sauce and toppings. I then place under a grill for a further 5-10 minutes to melt the cheese.
