My adaptation of CarlsHead Pizza - Plus Veggie Topping Ideas needed please

I have been playing with getting the right thickness (for me) for my version of Carlshead pizza. I cook the dough on the stove rather than in the oven as I find it much easier.

This is an individual size portion, around 10" in diameter.

Short version

Ingredients – Base ( this is a good size individual portion, about 25cm / 10″ wide )

  • 76g Grated Mozzarella Cheese
  • 12g Cream Cheese (I use Philadelphia)
  • 36g Almond Flour
  • Seasoning – I use chilli flakes, dried oregano, cumin seeds, carom seeds and a pinch of salt

Method is the same as carls for getting the dough, melt the cheeses in a microwave for around 30 seconds, add in the dry ingredients and mix/knead into a ball. Roll out (I do mine 2mm thick).

I then put it into a large frying pan on a low heat for around 7 minutes each side before applying sauce and toppings. I then place under a grill for a further 5-10 minutes to melt the cheese.

They all look mouth watering, one day I will try making fathead/carlshead.

Hi J I do my own version too, I put just a pinch of baking power in the base mix, I feel it just adds a bit of agitation to the mix. Toppings: Tampanard chopped fine or blended for a sauce or chopped very ruffly as a topping. Home made of course! I make up a big jar which only gets better with age keep’t in the fridge. When i’m feeling salty I put anchovies in it.

Only joind up today so I will get around to adding recipes.
