Mozzarella Pancakes

Ingredients
21 eggs
150 g almond meal
1200 g Mozzarella in small pieces
butter for the iron

Preparation

  1. Mix the mozzarella, almond flour and eggs in the food processor with a knife insert to an even mass.
  2. Preheat the iron.
  3. Add a piece of butter and spread it on the baking surfaces with a heat-resistant brush.
  4. Add enough mass to leave some space on the edge for a moment.
  5. Close the iron and bake the pancake until golden brown.
  6. Lift out the pancake.
    Continue again at 3. etc. until the mass is used up.

indeed, that’s a big quantity and would feed a big family :wink:
most of the 16 pancakes went to my freezer, so that I can take one whenever I like.
