More on wilted salad with emphasis on bacon

Listened to the latest 2KD podcast today and was inspired to post a recipe that my husband loves. Not sure it’s very original but it’s so simple and easy.

Start by baking 8 slices of bacon on a cookie sheet or fry in a skillet. I like using the oven as it seems to get the bacon to the perfect crispness. (375 for about 1/2 hour)

While the bacon cooks, slice up some large Portobello mushrooms and saute in butter or olive oil.

Create a salad of mixed greens and other vegetables of your choosing. Slice up some avocado and throw those in too.

When bacon is nice and crispy break it up and add it to the salad.

Pour the hot bacon fat into a bowl and whisk in:
3T red wine vinegar
1/2 tsp Dijon mustard
a hint of sweetener (if desired)- I use about 1/2 tsp of swerve

Pour the warm bacon dressing over the salad and enjoy!
