SWEET, SALTY, CRISPY, CHEESY, BACONY – WHOA!
So I’d never heard of a Monte Cristo sandwich but was just searching for a waffle sandwich idea since I just got my new waffle iron today. (Couldn’t make this with those incredible @Brenda Zorn waffles since I was out of pork rinds, but subbed another keto waffle recipe. I know it’ll be even better with zornwaffles!)
MAKES TWO SANDWICHES
1 cooked waffle
1 egg
Pinch of salt
1T cream
1/2 c grated cheese, Swiss or whatever you like
2 slices cooked bacon
2 T sugar-free jam or jelly ( I used my homemade zero-carb chille pepper jelly)
Pinch of salt
Butter for frying
OK, soooo…
First, pile half the cheese on 1/4 of the whole waffle.
Then stack on 1 slice bacon (broken into shorter pieces). Spread 1T jelly on another 1/4 waffle.
Beat the egg, salt and cream and dip the sandwich in the mixture to coat both sides.
Fry it in buttah, flipping after a minute or so so cook both sides until the cheese melts and egg is set…
Eat it…
Some people go all crazy and sprinkle powdered erythritol on top, but I was happy keeping it simple.
I had some leftover egg batter so I fried that too and threw it inside the second sandwich, which I’m saving for tomorrow’s quick egg-waffle breakfast. Yum!!
