Here is a modified version of this recipe:
I’ve doubled it, changed to 100% chocolate, and added more to it. To me, even with 8 Tbsp of allulose, this isn’t that sweet. I often add a bit of liquid stevia to it.
Also, 4 Tbsp = 1/4 cup, so I usually measure using 1/4 cup.
I have a lot of 4 ounce jars with lids, but this makes a lot. I run out of those and have to use larger jars with lids, but I try to keep the amount added around 3-4 ounces.
Chocolate Mousse (Paleo Grubs, larger)
Ingredients
8 ounces 100% chocolate
4 Tbsp (1/4 cup) coconut oil (will be hard depending on room temperature)
4 Tbsp (1/4 cup) cacao powder
2 (14 ounce) cans full fat coconut milk
Pinch salt
8 Tbsp (1/2 cup) Allulose, maybe some other sweetener (liquid)
1 Tbsp MCT oil
½ Tsp vanilla
Process

Add coconut milk, salt, allulose, MCT oil, vanilla, cacao powder, to a blender/food processor (I use blender)

Melt coconut oil in microwave, maybe 1+ minutes

Chop chocolate fairly small, add to microwave-safe bowl

Microwave chocolate on half power maybe 1-1.5 minutes, stir, keep going until melted

Add the melted coconut oil and chocolate to the blender/food processor

Mix on high for a while, push down sides, mix on high until it looks good (could taste and add more liquid sweetener)

Put in jars about 4 ounces, cap, put in fridge for at least an hour
